Chicken Broth

 

A simple heart-warming comforting nourishing bone broth soup. This particular combination always gets the thumbs up in my house.

Healthy Part

Packed with minerals and vitamins, anti-inflammatory, anti-microbial, antiviral

Rich in B vitamins, great for the, digestion, bones and immune system

 

Ingredients

Organic chicken carcass

Bunch of cavolo nero – roughly chopped

Bunch of swish chard – roughly chopped

Bunch of coriander – roughly chopped

6 baby leaks – roughly chopped

3 – 4 cloves of garlic – finely chopped

3inch fresh ginger – finely chopped

100g of glass or rice noodles (optional)

1 tablespoon of turmeric, you can use fresh turmeric 2 sticks

Himalayan salt and pepper

Method

  • Place chicken carcass in a large soup pan and cover with water, simmer for 2 hours
  • Add the rest of the ingredients and allow to simmer for a further 20 minutes

Alternatively

You can add miso soup paste and coconut oil for extra taste and health benefits.

Tip

You can use any bones left from your Sunday roast to make this super nutritious meal i.e. lamb, beef or chicken preferably organic or grass fed
